I just love the smell of herbs either in the garden or down in the basement drying. My husband on the other hand finds my weed collections annoying and thinks I’m a little over protective of my herb garden. Two large fences 5 feet tall, with terracotta pots surrounding it, my way of sharing a little of what I grow with the little woodland critters that like to eat without losing my own crop.

I would harvest them as soon as you can.
I am curious as to the reasoning behind the culinary herbs not being harvested after Samhain? For culinary purposes I would have never thought to put a limitation on it.
I’m sorry but I didn’t notice that you are from Georgia when I first responded. I’m in Zone 6 and we have to harvest before the first killing frost or the food is not any good.
According to Farmer’s Almanac you have a bit more time before your first frost.
i find that collecting herbs on the full moon at its zenith general results in the most potent form that particular plant (like the tide the moon swells the cellular structure, and psionic resonance)unless that particular plant, deity, ritual, energy form, ect.ect. is tied to a specific lunar phase
